Super Easy Pumpkin Oatmeal Cookie Recipe to make today!
These healthy, delicious cookies are Gluten-free, Paleo, Sugar-free and super easy to make. Here’s the recipe:
Ingredients:
1 1/4 cup rolled oats
2 Tbsp almond meal
1/4 tsp baking soda
1/2 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1 1/4 cup pumpkin purée
1/2 tsp vanilla extract
2 Tbsp maple syrup
2 egg whites
What to do:
Pre-heat oven to 350 degrees. Mix all dry ingredients then add remaining ingredients and mix til smooth. Drop by spoonful to foil lined, greased cookie sheet and bake for 15-20 minutes. Let cool and eat ‘em up! Oh, and these go PERFECT with a cup of coffee for breakfast!
