Rice takes some time to cook and to be honest, I don’t always want to take the time. So I came up with a way to always have rice when I need it.
When I have the time, I make a big batch of rice in a rice cooker. Let it cool then scoop out the rice with a measuring cup- I use 1/3 cup portions for hubby- and put it in muffin tins, then press it down with the back of the measuring cup so it’s nice and compact.
Pop ‘em in the freezer until frozen then pull them out and let sit for a few minutes to loosen from the muffin tin. Use a knife to gently lift the rice bombs out and store them in a ziplock bag or airtight container in the freezer til ready to use.
When you’re ready to cook them, just put them in a small pan with a little water to thaw and cook. You could also add chicken broth or salsa instead of water to give it a different flavor. And season it up however you like it. Super easy and such a time-saver when I want to cook something quick.
